Abstract

The production, refining and processing of palm oil will be outlined. This will be followed by an account of its composition, properties and applications in food products. Recent developments on the nutritional attributes of palm oil will be reviewed. The observations on these properties especially the nutritional quality of palm oil will be interpreted in the light of recent hypotheses including the role of free radicals in degenerative diseases.
