Abstract

Analysis was carried out on the leaf extract of Pandanus amaryllifolius in coconut milk. Pandanus leaves were extracted with water and coconut milk was added to the extract. The ratio of pandanus extract to coconut milk was 1:10 (formulation 1) and 1:5 (formulation 2). For storage studies, translucent bottles were filled with the samples and kept in a freezer for 30 days. The samples were used to make serikaya and the serikaya were also frozen for 30 days. The differences in aroma and flavour between fresh and stored samples were compared by observation for both the extract mixture and products. Chemical analysis included the determination of rancidity by the peroxide test: proximate. mineral and pH were determined by the AOAC method. Colour values were carried out using a colorimeter. Sensory evaluation on both the extract mixture and products were evaluated using a hedonic test. Regression analysis was used to determine the relationship between pH values and storage duration of the frozen samples and products. ANOVA for both samples and products showed no significant difference. Hedonic tests showed significant differences between different formulations. Formulation 1 is more favoured by the panellists.
