Abstract

The changes of its viscosity and pH were investigated in antioxidant activity of yogurt incorporated with leaf extract of Morinda citrifolia L. Ethanol leaf extract of M. citrifolia (MLE) was added to yogurt at 100, 500, and 1024 ppm. Changes in pH and viscosity of the yogurt were monitored. Antioxidant activity was measured by 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay system. Results showed that there was no significant (p< 0.05) difference in the viscosity and pH between yogurts incorporated with 100, 500 and 1024 ppm of MLE. Results also showed that the antioxidant activity of yogurts incorporated with MLE at 100 ppm extract was significantly higher (p<0.05; 22.65±2.41%) compared to that of the control (19.59±1.53%). However, there was no significant (p<0.05) difference in the antioxidant activity of yogurts incorporated with 1024 ppm extract (34.74±1.40%) compared to 500 ppm extract (33.15±0.63%). In conclusion, M. citrifolia extract can be incorporated into yogurts as it would not cause any changes in the viscosity and pH of the yogurt. The most suitable concentration would be 500 ppm as higher concentration would not significantly increase the antioxidant activity of the yogurt.
