Abstract

Ten selected Malaysian ‘ulam’ or salad were analyzed for α-tocopherol, ascorbic acid and carotenoids as well as catalase, ascorbate peroxidase and peroxidase specific activities. These included Sauropus androgynus (cekur manis), Piper sarmentosum (kaduk), Polygonum minus (kesum), Morinda citrifolia (mengkudu; young shoots), Centella asiatica (pegaga), Oenanthe javanica (selom). Manihot esculenta (ubi kayu; young shoots), Cosmos caudatus (ulam raja), Carica papaya (betik; young shoots) and Kaempferia galangal (cekur). The antioxidant production varied between the selected plants. For the non-enzymatic antioxidants, the highest production of α-tocopherol was observed in 0. javanica and the lowest was in C. papaya shoots. Piper sarmentosum exhibited significantly higher concentration of ascorbic acid and carotenoid and the least concentration were observed in C asiatica and S. undrogynus. Of all the ‘ulam’ studied. M. citrifolia produced the highest specific activity of ascorbate peroxidase and the lowest was observed in K. galangal. Catalase specific activity was 30-fold higher in S. androgynus compared to other ‘ulam’ while P. sarmentosum managed to produce the highest specific activity of peroxidase. These results revealed that enzymatic and non-enzymatic antioxidants had central and interrelated roles acting both chemically and as substrates in detoxification reaction of reactive oxygen species. The combined action of these antioxidants might provide a better protection against the development of chronic diseases.
